We call the Moussaka the "Labor of love" since it requires 3 day prepping in various steps. First we fry the potatoes and the eggplants and we let them rest on absorbing paper so that all the excessive Olive oil goes out. On the same day we prepare the meat ragu using local grass fed beef from the Nobriga ranch. The ragu takes tomato sauce, onions, garlic and many spices. Next day we mount the dish by laying the potatoes first, the eggplants second and the meat sauce third. Next step is to prepare the bechamel topping. That requires careful steps mixing the ingredients like organic milk, organic butter, organic eggs, flour, parmesan cheese and others and stiring constantly so that no clots are formed. When bechamel is ready we our it on top of the meat sauce and then we bake the pan for 30minutes. Let rest for one day, next day cut and serve.
